Ingredients:

- 2lb lamb or beef meat

- 1lb potatoes

- 150g green olives

- 2 onions chopped and a mixedbunch of parsley and coriander finely chopped

- salt and pepper, 1 tsp ofginger, saffron, paprika, olive oil.

Method:

1- Put the onions in a pan, add 1tbsp sunflower oil and simmer for a few seconds and add the ginger,paprika, saffron, salt and pepper.

2- add the meat and leave it tosimmer and turn occasionally, add the potatoes peeled and cutted intowedges and add the parsley and coriander and some water. And leave itto simmer for 20 min until the sauce thickened and the ingredientsare cooked then add the olives and olive oil.

 

Ingredients:

-2lb lamb meat

- 8 artichokes

- 1 lb green peas

- salt and pepper, ginger,saffron, 1 or 2 gloves of garlic crashed, 4 tbsp oil.

Method:

1- Peel off the artichokes and putits hearts into salted water.

2- Put the meat into a pan, addsalt, pepper, ginger, saffron, garlic, oil and cover it with water,cover with a lid and leave it to simmer and turnoccasionally.

3- when the meat is nearly cookedadd the peas and the artichokes and simmer until the vegetables arecooked and the sauce is thick.

 

Ingredients:

-2lb lamb meat

- 300g seedless raisins

- 2 onions chopped

- 1tbsp rass hanout (specialspices for this dish)

- 1 tsp ground pepper, 1 tspginger, 1/2 tsp saffron, 1 tsp ground cinnamon, salt

- 200g butter , 4or 5 tbsphoney.

Method:

1-Mix the spices altogether andsome water and soak the meat into this mixture. Then put it in a panadd the butter and the onions. Cover with water and with a lid.Simmer for 30 min and turn occasionally.

2- Soak the seedless raisins intosome of the mixture.

3- When the meat is nearly cookedadd the honey, the raisins, and cinnamon, and leave it to simmer for5 min until the sauce thickened.

 

Ingredients:

-1 whole chicken

- 2 garlic glovescrashed

- 1 onion chopped

- a small bunch of coriander andparsley

- 1 tsp paprika, salt and pepper,1 tsp ginger,saffron, 2 tbsp oil and 150g butter.

Method:

1- Crash the garlic and onion intoa mortar with some salt, and add the other spices.

2- Cover the whole chicken frominside and outside with this mixture.

3- Put oil and butter in a largepan and heat it slowly add the chicken and turn it over for 5-10 minand add 2 cups of water and the bunch of coriander andparsley.

4- Cover it, simmer and turnoccasionally, until the sauce thickened and the chicken iscooked.

5- Before serving, heat 100gbutter and 5 tbsp oil into a pan and fry the chicken. Or put thechicken in an oven tray buttered and grill the chicken into the ovenfor 10 min.
